Ingredients
2 1/2 cups Tap Warm Water
2 cups Caster
2tbsp Liquid Glucose
Pinch Salt
Juice & Grated Rind of 2 Fresh Limes
2tbsp Rose Water
4oz thin rice vermicelli noodles (Asian Style) – broken into 3 inch lengths
To Serve
Freshly squeezed Lime Juice
Optional:
Fresh Blackberries or Sour Cherries
Method
Cook the noodles for 5mins in boiling water. Drain, and put into iced water.
Combine the water with the sugar. Stir until the sugar has dissolved.
Add the glucose, salt, juice & rind of the limes and rose water. Stir well.
Pour into a shallow (1 inch deep) Pyrex dish.
Freeze for 1 to 2 hours until slushy but not solid.
Stir in noodles (a handful at a time).
Freeze until solid, stirring occasionally.
Scoop into dishes and crush with a spoon.
Serve with fresh lime juice
